Recipe: Delicious Spicy Wild Hog Sausage Balls

Jalapenos, cream cheese, shredded pepper jack, AND ground wild hog? If these ingredients weren't enough to get your mouth watering, adding butter and parsley will definitely get you there. The cheesiness of the sausage balls is a perfect compliment to the spice. 

As a hunter myself (as well as a chef), I was able to get some wild hog, but the recipe can be made with ground pork from the store if need be. The pancake mix pulls the recipe together, crafting the perfect ball. If you're having trouble getting them into shape, use an ice cream scooper to shape them into equal-sized balls. Keeping them the same size will allow for even cooking.

On top of how fabulous these sausage balls taste, they only take about 25 minutes to cook, making them the perfect game-day snack or quick and easy camping meal you can make ahead of time. Eat them as is, or serve them with your favorite dipping sauce.

Ingredients

  • 1 pound ground wild hog
  • 2 cups pancake mix
  • 8 ounces softened cream cheese
  • 2 cup shredded pepper jack cheese
  • 2 tablespoons diced pickled jalapeños
  • 1 tablespoon all purpose seasoning

Optional Topping

  • ¼ cup unsalted butter, melted
  • 1 teaspoon garlic salt
  • 1 teaspoon fresh parsley, chopped

Recipe Directions

  1. Preheat oven to 350 degrees F. Spray a baking sheet with cooking oil
  2. In a large bowl, combine groundhog, pancake mix, cream cheese, pepper jack cheese, jalapeños and seasoning. Mix well until ingredients are well combined.
  3. Use an ice cream scooper to form into equal-sized balls. Place them onto the baking sheet.
  4. Bake for 25 minutes or until cooked through, 160 degrees F.
  5. While the balls are cooking, combine the melted butter topping by whisking melted butter, garlic, salt, and parsley in a small bowl.
  6. Brush the topping over the balls and serve hot.
