Wild Game Recipe: Nashville Hot Inspired Fried Rabbit Nuggets

Ready for a spicy wild game meal? I sure hope so, because these Nashville Hot-Inspired Fried Rabbit Nuggets are going to turn up the dial on your taste buds. Plenty of folks, even wild game connoisseurs, have never tried rabbit, and this is a fun, exciting way to familiarize someone with the meat, while also giving them a bit of heat to add to the experience. Fried rabbit nuggets are one of my favorite ways to prepare it, and kicking it up a notch with these spicy ingredients is a great way to make it special.

Fried Rabbit Nuggets Ingredients

1 cup Buttermilk
2 tablespoons Franks Red Hot Wing Sauce Buffalo
1 lb of rabbit meat, de-boned and cut into small bite-sized pieces (about 1/2 inch)
1/2 cup all purpose flour
1 teaspoon cornstarch
1 tablespoon ground cayenne pepper
1 teaspoon packed brown sugar
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
Frying Oil

Nashville Hot Fried Rabbit Nuggets Recipe Directions

1. Debone and remove any silver skin from the rabbit. Cut it into small equal bite sized pieces, about 1/2 inch.
2. Place it in a ZipLock bag then pour the buttermilk and Buffalo sauce over top.
3. Marinate overnight if able, or for at least 8 hours.
4. Combine the flour and seasonings in a container with a lid (this will make it easier to mix)
5. Remove the rabbit pieces from the marinade and add into the flour mixture. Once all the rabbit is in, close the lid and shake until the mixture is evenly combined
6. Remove from flour and place onto a wire rack for 5 minutes.
7. Set your deep fryer temperature to 350°F.
8. Place the nuggets into the deep fryerin batches. You will likely have to do this in batches to avoid them over crowding. Deep fry for approximately 3-5 minutes, or until the rabbit is at least 165°F. (Note: Some of the smaller pieces will cook first)
