The longest task at hand will be cubing your venison. Be careful not to overcook this lean meat, which tastes best medium-rare. The final step has you tossing the steak bites in a tangy homemade glaze: The honey adds a sweetness to the meat, which is balanced by the Dijon mustard and balsamic.

Honey Balsamic Venison Steak Bites

Ingredients

  • 1 - 1.5 pounds venison steak
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon cooking olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • ¼ cup balsamic vinegar

Recipe Directions

  1. Cut the venison steak into 1-inch cubes. Pat dry using paper towels, then season with garlic powder, salt, and black pepper. Toss to coat.

  2. In a small bowl, whisk together Dijon mustard, honey and balsamic vinegar to create the honey-balsamic sauce.

  3. Add olive oil to a skillet over medium-high heat. Add the venison to the hot skillet and let sit undisturbed for 1 minute to develop a good sear. You may need to sear the venison in batches so there's enough room in the pan for flipping.

  4. Flip the venison and let it sear for 30 seconds to 1 minute per each side.

  5. During the last sear, add in the honey-balsamic sauce after you've flipped. Mix constantly for 30 seconds to 1 minute; the venison should be medium-rare.

  6. After plating, drizzle with the honey-balsamic sauce from the pan.
