Steelhead burgers are another way to preserve and prepare the river’s bounty.
Tyler Hicks of School of Fish Guide Service was kind enough to share this recipe of his with me that he uses to preserve his annual steelhead bounty. It’s nice to have prepared meals on hand in the freezer where most of the work has already been done. These convenient steelhead patties can make easy meals and might even be a hit at your neighbor’s next barbecue. Follow this simple recipe and pack your freezer for many cookouts to come. - 1 lb steelhead/salmon
- 1 egg, 1/4 cup walla walla onion chopped
- 1/4 cup basil
- 1 tbsp lemon peel
- 1 dill head chopped
- 1 tbsp siracha
- 2 garlic cloves chopped
- 1/2 cup bread crumbs
- 1 tsp black pepper
Shape and freeze, wrap in plastic wrap, and vacuum seal. To prepare the burgers for a meal, pan sear till golden brown on medium-high with a little oil. Can be grilled but binds better when seared in hot oil. Good condiments include teriyaki sauce, wasabi, horseradish, and your typical burger veggies.
