This flounder Caribbean recipe is a very easy recipe but with some great ingredients.

Flounder Caribbean 


  • 1 1/2 lb Flounder fillets
  • 1/4 ts Salt
  • 1 1/2 tb Lime juice
  • 1/2 ts Oregano
  • 1/4 ts Garlic powder
  • 1/2 ts Onion powder
  • 1/4 ts Pepper
  • 1 Bay leaf, crumbled
  • 1 6 oz. tomato paste
  • 1 1/2 ts Coconut extract
  • 1/2 c Water


Preheat oven to 350 degrees. Combine all the ingredients in a bowl and pour over fish in baking dish. Bake 30 minutes, uncovered.

Serve over greens or potatoes and a nice glass of white wine. Talk about a healthy, yet delicious, meal.
