Put Some Game On It: BBQ Pheasant Pizza

Everyone loves pizza and it's even better with some game on it.  

Ask any five year old what their favorite food is and most will answer, pizza. I know it was my favorite, probably due to The Adventures of Mary Kate and AshleyI want pizza! P-I-Z-Z-A!

One way to add to your pizza affinity? Go out and hunt pheasant. For some reason there seems to be less hunters this season; they're are down 40 percent compared to previous seasons. Some say it is an antiquated sport, but maybe you should go prove them wrong.

Pheasant meat is really good, and an interesting alternative to chicken. Give this BBQ pizza recipe from Food for Hunters a shot.

Pizza dough is pretty easy to make, and a recipe to make your own dough is on the Food for Hunters blog. But here, we will only be making the pizza (you can also cheat and get store-bought dough, we won't judge).

BBQ Pheasant Pizza



First, take your pheasant breast and fillet the meat from the bone.

Coat the breasts with BBQ sauce and heat up the grill.

For the pizza sauce, combine 1/4 cup of the BBQ sauce with 1/4 cup of marinara.

Slice the fresh mozzarella and set aside.

Saute the onion in some olive oil until translucent.

Cook the pheasant breasts on the grill for 5 minutes on each side. If you over-cook, they will get dry and not-so-tasty. Baste with the rest of the BBQ sauce.

Chop the grilled breasts.

 Food for Hunters

Roll out the dough, depending on how thin/thick you like your crust.

Spread the BBQ/marinara mixture over the dough, add the mozzarella and the chopped pheasant.

Add the sauteed onion and the chopped green onion. Drizzle the leftover BBQ/marinara sauce over the pizza.

Bake at 500 degrees for 10 minutes, or however crispy you like your pizza. Garnish with red pepper flakes and parmesan.
