Mahi Mahi - also known as dolphins - are prized game fish. They have brilliant colors, they fight hard and jump high when hooked, and best of all, they are delicious. If you catch one, you'll have one of ocean's tastiest fish to eat.

But before you can eat your mahi mahi catch, you'll have to fillet it.

In this video, Captain Brynner Parks, of North Carolina, teaches how to properly fillet mahi mahi.

Parks starts the video by imitating Julia Childs, but bare with him, he doesn't take long to get into the technique.

Mahi mahi are not only good to eat, they're also fun to catch. They're considered one of the most sought after saltwater game fish in the world, because of their brilliant colors, incredible leaping power and ability to fight hard once hooked. Mahi mahi are also fairly accessible with light tackle.

Mahi Mahi can be found in both the Atlantic and Pacific oceans. You can also buy mahi mahi fillets in most grocery stores.
