Every now and then my wife and I get in the mood for Mexican-style food. There aren’t many Mexican restaurants around where we live so most of the time we have to fend for ourselves when it comes to giving in to this craving.
With that in mind, these venison fajita lettuce wraps often do the trick. This is a very easy recipe that makes enough for leftovers and is also fairly healthy at the same time.
With that in mind, make this recipe your own but let the below example be your guide.
Venison Fajita Lettuce Wraps
- Thawed tenderloins or steaks sliced into strips
- sliced onions
- sliced peppers
- large lettuce leaves for wrapping
- 1 packet of fajita mix/sauce
- vegetable oil
Very few ingredients and even fewer instructions qualifies a recipe favorite in our house. To get this recipe started, use a tablespoon of vegetable oil and saute the onions and peppers until slightly tender but still maintain a crispness. After finished, remove from the pan and add in a little bit more vegetable oil for the venison.
Make sure the oil and pan is very hot. Next, add in the strips of venison and pan sear both sides for about 30 seconds, or until your preferred temperature.
When finished, add in the packet of fajita mix and cook according to the directions. Most likely you will be combining everything together and stirring slightly until done.
Now, use your chilled lettuce leafs as a tortilla and top with guacamole, vegetables, and venison. Enjoy!
