What is the easiest meal? Pasta! How do you make it better? With wild boar chorizo!
Pasta is always my go-to meal. But wild game always makes it better. Try making your own chorizo with all that boar you have in your freezer.
Making fresh chorizo is easy, it’s just all about the spices. I made the boar chorizo to put over spaghetti but you can make a sandwich or put it in eggs. For my meal, I made a beet salad to go with the chorizo pasta.
Ingredients for Chorizo:
2 pounds ground boar
1 1/2 crushed Aleppo peppers
1 1/2 tablespoons chili powder
4 cloves minced garlic
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon oregano
1/4 teaspoon coriander
Toss the ground boar with the spices and let sit in the fridge for an hour. In the meantime, boil water for beets. Boil the beets for 45 minutes or until they are soft when you poke them with a fork. Now boil water to make pasta.
The beet skin should be easy to scrape off when done. Scrape off the skin and slice to put over salad.
Dress the salad with 1/2 tablespoon of garlic and sprinkle some olive oil and red wine vinegar, to taste. Add salt to taste.
Saute the chorizo for 5 minutes. It cooks very quickly. Add marinara sauce and serve over drained pasta.
Serve with bread and glass of wine. Yum!
