All right, ya’ll…fall hunting season is right around the corner! What better snack to gnaw on than some delicious wild game homemade jerky?

From deer to duck to goose, jerky is the tastiest snack. Get to drying so you’ll never have an empty stomach up in the stand or in the blind.

Here are the best wild game jerky recipes for you to take on your adventures.

Whiskey Deer Jerky

What you need: 

  • 2 pounds Venison
  • 1 C Water
  • 1 C Corn Whiskey
  • 2 TBSP Worcestershire sauce
  • 2 TBSP Soy sauce
  • 1 TBSP Kosher Salt
  • 1 TSP Ground red pepper
  • 2 Sliced Cloves of Garlic, Sliced

What to do: 

  1. Cut strips about a quarter-inch thick.
  2. Trim fat.
  3. Combine ingredients.
  4. Marinade for about an hour.
  5. Use a dehydrator or smoker and cook to desired consistency.

Smoky Cola Jerky

What you need: 

  • 1 C cola
  • 1/3 C soy sauce
  • 1/3 C unseasoned rice vinegar
  • 1/4 C honey
  • Kosher salt
  • Chopped chiles in adobo sauce
  • 1 TSP paprika
  • 1 TSP onion powder
  • 2 lbs 1 inch squares of boneless beef sirloin

What to do: 

  1. Combine cola, soy sauce, vinegar, honey and 1 tablespoon salt and simmer on medium heat for 12 minutes.
  2. Remove from stove and add chipotles, paprika and onion powder.
  3. Trim the excess fat, slice into quarter-inch strips.
  4. Put strips and cola mix into a ziploc bag and coat all ingredients.
  5. Let excess air out of the ziploc, close, and marinate in the refrigerator for 1-3 days.
  6. Discard marinade and cook in oven for 2-3 hours at 200 degrees or use your favorite dehydrator.
  7. Store up to three weeks.

Duck or Goose Jerky

What you need: 

  • 3 lbs duck or goose breast
  • 2 C water
  • 2 TBSP kosher salt
  • 1/4 C Worcestershire sauce
  • 1 TSP garlic powder
  • 1 TSP dried thyme
  • 1 TSP cayenne
  • 3 TBSP brown sugar

What to do: 

  1. Slice meat quarter-inch thick.
  2. Combine and mix the rest of the ingredients.
  3. Massage meat and marinade.
  4. Place into ziploc bag and let sit for 1-3 days.
  5. Massage meat continuously as it marinates.
  6. Use dehydrator or oven cook on warm for 6-8 hours.
  7. Store up to a month

Mondo’s Hot and Spicy Venison Jerky

What you need: 

  • 2 pounds of deer steak strips
  • 7 OZ soy sauce
  • 7 OZ Worcestershire sauce
  • 2 TBSP brown sugar
  • 2 TBSP salt
  • 2 TSP black pepper
  • 1 TSP liquid smoke flavoring
  • 1/2 TBSP garlic powder
  • 1 TBSP red pepper flakes

What to do: 

  1. Cut fat and slice into strips
  2. Combine all ingredients into ziplock bag
  3. Marinade for 1 day.
  4. Dehydrator till completely dry.

Moose or Beef Jerky

Climax Jerky
  • 3 LBS rump roast
  • 3 C soy sauce
  • 3 C packed brown sugar
  • 4 OZ hickory-flavored liquid smoke

What to do: 

  1. Slice roast 1/4 inch strips and trim fat.
  2. Combine the soy sauce, brown sugar and hickory-flavored liquid smoke.
  3. Marinade in ziploc bag for 30 minutes in the refrigerator.
  4. Dehydrator for 24 hours, rotating trays every six hours.
