The gutless method seems to be gaining some popularity, especially for those who backpack hunt. It is much easier then attempting to drag an animal out of the bush whole. It saves time and can save you money at the butcher!
While I use the same method to quarter an elk (or any animal), I choose to remove the hide before quartering and use a cheese cloth to protect the meat from dirt and flies.
But if you were in a hurry or didn’t have any cloths, this is a great way to go.
