Scale it and portion it.
Be sure to scale and gut the fish before storing it, and remember to portion out the fish for your meals. By freezing the right amount of fish you avoid thawing out more than you need at one time.
Freeze in a block of ice.
Place the fish in a large container and fill with water, but be sure to knock the sides of the container before placing it in the freezer, to get out any stubborn air bubbles.
Put ice block into freezer bag.
Once the ice is frozen solid take it out of the container and put in a freezer-safe bag. Remember to label the bag with its date and contents, and keep it in the freezer until you’re ready to use it.
