Use a broad flexible knife and begin at the tail of the fish by making a small nick. Then grab the tail and align the knife with the skin by gently work the blade down.
Once you’re far enough down the fillet, grab the excess skin by wrapping it around your hand. Simply pull on the skin and continue to slide the knife through the meat.
Next, run the knife blade horizontally down the length of the fillet, and then extract the exposed bond with tweezers.
