Ultimately, one must open the fish’s cavity to finish the job, so why not just do it then? Still, people the world over prefer having a whole fish on their plate as compared to just a fillet.
I have no problem seeing the head, tail, and everything in between in front of me when I eat fish, partly because filleting them can be wasteful if done improperly.
