For your Italian-themed wild game dinner: Spaghetti with venison bolognese.
The next time you have an Italian-themed wild game dinner party, or make spaghetti as a quick meal, consider this recipe for spaghetti with venison bolognese. It is extremely easy and with a nice bottle of merlot and a light salad, you’ll be dining like the kings and queens of ancient Rome.
1 pound ground venison
1 clove minced garlic
1/2 onion, diced
1 tomato, chopped
4 oz. can tomato paste
2 tsp vinegar (red wine or apple cider)
Spices: basil, rosemary, thyme, salt, pepper (all sprinkling to taste)
1 bay leaf
Heat butter in a pan, saute garlic and onion first. Add venison and tomatoes, cook until venison is brown. Add remaining ingredients and let simmer for an hour, stirring every now and then.
Serve over hot spaghetti with some fresh bread, wine and a salad.
