Here’s a condensed version on the process:

  • Preheat oven to 425 F
  • Roast the haunch initially for 20 minutes
  • Turn the oven down to 300 F
  • Roast for 10 minutes per 500 grams for rare to medium
  • OR roast for 15 minutes per 500 grams for medium to well done
