Make some delicious dorado ceviche cooked fully in nothing but lime and orange juice.
It is pretty crazy that fish can be fully cooked in nothing but some lime and orange juice. The phenomenon of cooking fish in citrus is easy and it tastes delicious. The first step, obviously, is to go catch some fish.
1/2 fillet dorado (or however much ceviche you want to make but you can save half the fish for chile rellenos)
1 onion, chopped
1 tomato, chopped
1/2 cup cilantro, chopped
1 jalapeño (seeds removed if you are worried about spiciness), chopped
salt to taste
2 cups of fresh lime juice and freshly-squeezed orange juice
Cube the fish and soak in citrus juice for two hours until it turns white, which means it’s cooked. We used half of a full fillet.
Squeeze the juice from the fish bites after they’re cooked and add to chopped tomatoes, onion, cilantro and jalapeño. Add salt to taste.
Serve with chips or tortillas. If you want to get really fancy, which we did, you can take old tortillas and fry them in oil to make the freshest appetizer you’ve ever had.
