Have some wild game for breakfast by making eggs with boar sausage on brioche. 

Wondering what to do with that boar sausage in your freezer? Ready for a big Saturday breakfast? Make some scrambled eggs with boar sausage on brioche to start your weekend off right.

This recipe makes enough scramble for only two people so if you have a big family to feed, obviously add more ingredients.

Ingredients: 

5 eggs

1/4 cup milk

1/4 cup of shredded cheese (mozzarella, cheddar, you pick)

6 wild boar sausages

2 bell peppers (red, green, or yellow)

1/2 onion

1/2 cup mushrooms

1 clove garlic

Salt, pepper, cayenne- to taste

Directions:

Heat some olive oil in a pan and cook the sausage until about halfway cooked. Add the onion, bell peppers, garlic, mushrooms and sausage.

Cut some pieces of brioche or toast. Cut the middles out and spread some butter over them. Put in oven at low broil for 5 minutes or so. Watch to prevent burning, this is just to toast them up and melt the butter.

Beat the eggs milk and cheese. Scramble the egg mixture and season with salt, pepper and cayenne (optional).

Put the slice of brioche on a plate, place eggs in the middle with the boar mix on top and enjoy with a nice glass of orange juice or coffee.
